Observed fish in Reach-in Cooler thawing, not removed from vacuum packaging. Person-in charge (PIC) instructed fish must be removed from its vacuum pack prior to, or immediately after thawing. PIC determined fish finished thawing this afternoon with no air spots introduced and package fully opened with fish not sealed to packaging.

Observed chlorine sanitizer for chemical dishmachine testing at 0ppm. Corrective Action (CA): Person-in charge (PIC) instructed chlorine sanitizer must remain between 50-100ppm. Use 3-compartment sink to wash, rinse, and sanitize until dishmachine is testing at correct santiizer concenteratrion. Technician called.
