Low sanitizer concentration of chlorine sanitizer in dish machine after multiple runs. Corrective Action (CA): Person in Charge (PIC) instructed to ensure chlorine concentration in dish machine is maintained at 50-100 ppm. PIC rebooted sanitizer controller and machine sanitizer concentration was 100ppm. Advised PIC to have employee check concentration with test strips throughout shift if problem is ongoing and to get regular maintenance. COS. REPEAT.

Observed chlorine sanitizer concentration in dish machine below 50ppm. Corrective Action (CA): Person in Charge (PIC) advised to ensure chlorine sanitizer levels are maintained between 50-100ppm. PIC advised to use sanitizer compartment of three-compartment sink with quaternary ammonia sanitizer to sanitizer food pans/utensils after being washed and rinsed using the dishwasher. COS.
