Raw chicken stored over raw shrimp. Food shall be protected from contamination by arranging food in equipment so that cross contamination is prevented. COS: Chicken moved.
6-1A - proper cold holding temperatures

Beef and ham (47 deg f and 46) cold holding above 41 deg f. Food being held cold shall be maintained at 41 deg f or below. COS: Out of temp food discarded.
