Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Whipped cream in reach in cooler was cold holding at 44 degree Fahrenheit
CA: Except during preparation, cooking or cooling or when time is used as Public health control, temperature control for safety food shall be maintained at 41 deg. f. when cold holding.
COS: Larger items blocking fan was moved to the lower part of the refrigerator and the whipped cream was moved to the upper part of the refrigerator during the inspection the whipped cream cooled down to 41 deg f.
