6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Spinach artichoke dip and beer cheese cold holding in the prep top cooler above 41 deg f. Sliced cheese was cold holding in the reach in cooler under the grill above 41 deg f.
CA: TCS food cold holding shall be maintained at 41 deg or below.
COS: During the inspection the spinach, slice cheese, and beer cheese were taken off the line, and put into the walk in cooler to cool.
4-2A - food stored covered

It was observed that multiple items were uncovered. Noodles in Reach in cooler, boneless wings in Reach in cooler and honey BBQ sauce were uncovered.
CA: Food must be stored covered in order to prevent contamination.
COS: All food covered during the inspection.
