Routine

Score: 911 violation

6-1A - proper cold holding temperatures

Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)

9 ptsCorrected: NoRepeat: No

Observed multiple TCS food items in reach-in cooler and walk-in cooler held above 41F. Upon discussion with owner, it appears that the facility is turning the sandwich cooler off at close of business and then turning it back on at about 8:45AM and loading it with food before the store opens at 9AM. It is unlikely that this is enough time for the cooler to sufficiently cool to temperature before the store opens. Ambient temperatures of the sandwich coolers appeared to decrease while the temperature of some food items decreased and other increased to closer to the ambient.
