-Observed Quat Sanitizer solution stored in the 3 compartment sink and 2 separate buckets throughout the kitchen with chemical concentrations greater than 40ppm. *COS, Sanitizers were diluted upon request by PIC.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
-Observed hood ventilation filter for pizza oven with accumulations of grease and debris in the kitchen. Was noted previous inspection. PIC stated hood was recently cleaned within last few months. Last dated sticker 8/24. -Observed soiled shelving with old food debris in the walk in cooler of the facility. -Observed soiled shelving and ceiling with moldy debris in the front service Pepsi reach in cooler containing 2 liter sodas. *CTM, Conduct general cleaning and send documentation to Kristen.Tyler@dph.ga.gov within 72hrs.
