-Observed employee drink stored on prep table underneath storage of to go plates and bowls in the cook line area of the rear kitchen. -Observed employee gatorade bottle stored near a microwave in the cook line area of the kitchen. -Observed employee drink without straw stored on shelf above the chicken breading prep top cooler in the rear kitchen directly next to a box of salt. -Observed employee personal thermos stored near lids in the dry storage area of the facility next to the 3 compartment sink in the rear kitchen. *COS, Employees were stored correctly upon request by PIC.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
-Observed empty pitcher stored in bar area hand wash sink in the bar area of the facility. *Observed plastic food storage container stored in the hand wash sink of the dish washing area of the facility. -Observed server's area front hand wash sink without drying provisions available in the front servers line of the facility. *COS, Dishes were removed upon request by PIC and employees. Paper towels were added to dispenser upon request by PIC.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
-Observed Quat sanitizer solution stored at front servers line in front service area of the kitchen with chemical concentrations around 0ppm. -Observed Quat sanitizer solution stored on shelf under veggie prep area of the facility with chemical concentrations around 0ppm. -Observed Quat sanitizer solution stored on shelf on the cook line of the facility with chemical concentrations less than 200ppm. Manufacturers recommendations are between 200ppm-400ppm. Dispenser was dispensing Quat solution between 150ppm-200ppm. -Observed wet wiping cloth stored on shelving of dish drying rack by food storage containers. *COS, Wet wiping cloth was stored in sanitizer solution by employee. Sanitizer solutions were discarded by employees and remade. Facility must hand pour solution and measure with test strips until dispenser can be serviced.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
-Observed multiple crack and chipped tiles throughout facility holding standing water. -Observed large accumulations of grease, dirt/debris, and old food debris on flooring behind shelving in the single service dry storage area of the facility, underneath the 3 compartment sink, and underneath the bar 3 compartment sink in the bar area. *CTM, Conduct general cleaning of flooring and repair flooring tiles and send documentation to Kristen.Tyler@dph.ga.gov within 72hrs.
