Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Quat sanitizer solution in-use not at proper minimum strength upon testing bucket. Employee observed wiping down equipment. COS, Sanitizer bucket was emptied and refreshed with new sanitizer solution by staff upon request.
