6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
TCS foods (Elbow noodles, Fettuccine noodles, sliced tomatoes, vegan patties) not properly date marked with preparation or disposal date. Some items were from yesterday per PIC. TCS foods were properly marked with preparation date by staff upon request.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(e) - conditions of use (p, pf, c)
Observed Quat sanitizer solutions exceeding the maximum concentration allowed (Bar area). Quat sanitizer solution was diluted upon request by staff.
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Hot water pressure observed low at hand wash sink in main kitchen. Must be repaired in timely manner; Send verification to Bernotta.Linder@dph.ga.gov
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed grease accumulated on floor under/between cooking equipment. Must be cleaned within timely manner. Send verification to Bernotta.Linder@dph.ga.gov.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Ceiling tiles observed with water damage and wall base strips in disrepair throughout main kitchen area. Must be replaced & repaired. Send verification to Bernotta.Linder@dph.ga.gov
