Pot of homemade chicken stock not held at 135f or greater on stove. COS, Homemade chicken stock was discarded upon request by PIC.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Containers with raw shrimp, raw beef, raw chicken, sliced carrots, cooked pork, and chopped onions observed uncovered in reach-in cooler. COS, All food items were covered upon request by PIC.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed live roaches in facility toward back area where prep table with sink attached. Have pest control company come service.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Facility observed with unnecessary items throughout that are not used for operations in the kitchen. Highly recommend decluttering and removing items no longer needed for establishment.
