6-1B - proper hot holding temperatures
-Observed Consume Soup (129/130F) and Spanish Rice (112F) stored in the steam table of the front service area not hot holding at 135F or greater. *COS, Rice and Soup were discarded upon request by PIC.
6-1C - proper cooling time and temperature

-Observed multiple containers of grilled chicken (90F, 105F, 94F) prepped this morning around 8:30am/9:00am, cooling in the clear door reach in refrigerator of front service, that did not cool at a rate fast enough to reach 70F within 2hrs. Discovery was around 3:22pm. -Observed pan of Carne Asada (90F) that was prepped this morning around 9am, cooling in the clear door reach in refrigerator of the front service area of the kitchen, that did not cool to 70F within 2hrs and 41F or below within 6hrs. Discover was around 3:25pm. -Observed multiple food storage pans of grilled chicken (53F, 53F) prepped yesterday (2/25/26), stored in the clear door reach in refrigerator of front service that did not reach 41F within 6hrs. -Observed Queso cheese (52F) prepped this morning around 9:00am cooling in the reach in freezer near the swing door of the kitchen, that did not cool to 41F within 6hrs. Discover was at 3:50pm. -Observed Al Pastor (98F, 100F) prepared today around 9:30am cooling in the double door clear reach in cooler in the front service area, that had not cooled to 70F within 2hrs and 41F within 4 additional hours. Discover was around 3:40pm. *COS, All meats and Queso were discarded by PIC upon request.
6-2 - proper date marking and disposition

-Observed multiple containers of food items (1 pan of Birria ((2/16/26- Prepped)), & 2 pan of Birria ((2/19/26-prepped)) hot holding in counter top oven in the front service area of the kitchen with date marking exceeding 7 days. -Observed 3 large containers of Consome soup (Prepped 2/19/26) stored in the clear door reach in refrigerator of the front service area of the kitchen with date marking exceeding 7 days. *COS, Out of date food items were discarded upon request by PIC.
