4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed the facility using a spray bottle of "multi-surface" sanitizer with no recognized concentration of food grade sanitizer. CA: food service establishments must use food-grade sanitizer for sanitizing all multi-use surfaces in the front food surface and kitchen areas. Facility has a EcoLab calibrated 3-comp sink dispenser of QUAT sanitizer. COS Educated staff and facility dumped and refilled bottle with appropriate QUAT sanitizer from kitchen 3-comp sink.
