4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed all three compartments of the warewashing sink to be unable to retain liquid due to leaks around basin drain. CA: all basins of the sink must retain water at a level that completely submerges dishware for proper warewashing. COS maintenance obtained three rubber stoppers for the basins and will address the issue to ensure basin retention.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed a leak under the 3-compartment sink that appeared to come from the drainage lever for the sanitize basin. CA: plumbing and sink drainage must be installed and maintained to properly discharge water into the approved septic system onsite. COS: Maintenance work order placed
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.5 (2)(jj) - food service equipment, acceptability.
Observed in use air fryer that had a manufacturer label of "for household use only". CA: all equipment in use in commercial kitchens must be commercial grade COS: air fryers removed from use in kitchen
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulated food and physical debris on interior shelves and gaskets of reach-in units, exterior handles and doors of reach-in units, dry storage shelves, interior of front food service microwave, and vent hood covers. CA: all nonfood contact surfaces must be cleaned and sanitized as often as necessary to prevent accummulation of debirs. COS: surfaces will be sanitized after service today
