Observed raw egg, lobster stored above washed fresh fruit in the reach-in cooler (RIC). CA: Ensure to store raw food items below and separate from washed, cut, ready-to-eat food to prevent contamination. COS: person in charge moved and rearranged raw food and ready-to-eat food to the proper shelf and order.

Observed a beef and cheese store in the walk-in cooler not covered as required. CA: All food shall be stored covered to prevent contamination, except during cooling. COS: All concerned foods were covered by PIC

Observed black slime mold-like substance on the gasket around the drip rack and on the surface inside the ice machine. The ice machine shall be cleaned by 10/22/2025

Observed a couple of dry foods (rice, Peas) not labeled or identified as required. COS: PIC labels all concerned food

The shelves located in the walk-in cooler shall be replaced because of the peeling and rusty parts.
