Observed container of beef in the oven to measure 90F-106F. The beef had been cooked approximately 1.5 hours prior and was not meeting proper cooling parameters (135°F to 70°F within 2 hours). The person in charge was instructed to reheat the beef to 165F and restart the cooling process in order to be properly hot held in the steam table.

Observed a large plastic container containing potatoes measuring at 70F located in the walk in cooler. According to Manager, it had been placed in the walk in cooler since 1 PM. Container was put into the freezer to rapidly cool. Recommend using metal containers or portioning potatoes out into smaller containers.
