Observed two pans of green beans cooling at 78F in the Walk in Cooler. According to the Person in Charge, they had been placed in the walk in cooler since 11 in the morning. Both medium pans of green beans were discarded.

The following food items measured above 41F for over four hours: 3 trays of crab (46F) and 6 trays of raw shrimp (51F) in the prep top cooler. All items discarded. Inspector noticed temperature of food increased after each tray was measured. The temperature increase is indicative of a stacking and organization issue, rather than a malfunction of the cooling unit. Improperly stacked trays may restrict airflow, and prevent food product to cool properly.
The following food items measured above 41F for over four hours: 1 large tray of whitefish (51F) and two medium trays of catfish (51F). All items discarded, follow up for cooler required.
Excessive amount of flies throughout facility. Light was visible around rear exit door. Back door threshold should be replaced. Fly strips need to be changed out. Follow up required

Ceiling near desk area is missing ceiling tiles and water from the ventilation is dripping into a bucket and onto the floor. Manager on Duty stated there is a work order in place. Follow up required.

The pre-rinse sprayer attached at the three-compartment sink hung below the maximum flood rim of the sink.
A spray nozzle was attached downstream from the mop sink atmospheric vacuum breaker (AVB). The inspector noted that the ABV was not rated for the continuous pressure caused from the hose and spray nozzle. The manager removed the spray nozzle.
