15A: .05(6)(a)Observed that the prep cooler located across from the grill had an ambient temperature of 53 degrees. All TSC food items inside the cooler were around 45 degrees, however, the Person in Charge (PIC) stated that all food items had been placed there 45 minutes prior to the inspection. TCS Food items were moved to reach in cooler to cool back down to 41 degrees. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. (C) Corrective Actions: The PIC removed items from the prep cooler and placed them in the larger reach in cooler. The PIC will place all TSC items on ice before placing them in the prep cooler until the prep cooler has been repaired to maintain a temperature of 41 degrees or below. PIC will ensure that while using ice that the temperature maintains 41 degrees or below for TSC items.

4-1A: .04(4)(c)1(i)(ii)(iii)(v) (vi)(vii)(viii)Observed containers raw shrimp, raw chicken, raw egg, and raw beef all being stored together in the reach in prep cooler. Must display, store, prepare, and hold foods so they are protected from cross contamination. (P) Corrective Actions: Person in Charge (PIC) moved the food items so that they are being stored correctly.
17D: .07(4)(b)Observed a water bottle and an umbrella being stored with items for the facility. Also observed someone's personal bananas being stored on the utensil rack. Areas designated for employees to eat, drink, and use tobacco shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. (C) Corrective Actions: PIC moved items to a designated employee area.
