12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed multiple damp towels stored on counters throughout kitchen area. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held in a chemical sanitizer solution between use. COS: PIC removed damp towels from kitchen.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed knives stored in crevice between prep top cooler and prep table in main kitchen area. CA: During pauses in food preparation, utensils shall be stored on a clean portion of the food preparation table and cleaned and sanitized at a frequency necessary. COS: PIC removed utensils to be sanitized and stored properly.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no test strips in facility to check sanitizer concentration. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. PIC notified to obtain test strips.
