Observed food employee wearing gloves preparing pizzas in main kitchen area, walk to front of store and assist customer at front counter, then return to main kitchen area, remove gloves, and don new gloves to begin preparing pizzas. Employee did not wash hands between task change. CA: Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation, and before donning gloves to initiate a task that involves working with food. COS: PIC had employee stop & wash hands.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed shelves, bottom of cooler, doors, and door seals of lower portion of pizza prep top cooler encrusted with accumulation of food debris. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed employee backpack stored on dunnage shelf with bulk containers of pizza flour, and observed unopened employee drink (gatorade bottle) stored above food items in walk-in cooler. CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: PIC moved items to office area.
