6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple TCS items on pizza prep top cooler holding at a temperature greater than 41F. CA: Cold TCS food items are to be maintained at 41F or below. COS: PIC stated food items had been on unit less than 2 hours, therefore were moved to walk in cooler to rapidly cool. PIC notified to not use prep top cooler until in good repair.
2-2B - proper eating, tasting, drinking, or tobacco use
Regulation: 511-6-1.03(5)(k)1&2 - eating, drinking, or using tobacco (c)
Observed employee personal drink in re-usable cup stored on prep table while food was being prepared in main kitchen area. CA: Personal drinks are to be in single service cup with lid & straw and stored in an area to prevent any contamination. COS: PIC moved drink outside of kitchen area.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Observed no paper towels or hand drying provision at hand sink in front of main kitchen area. CA: Handwashing sinks shall be stocked with hand drying provision at all times. COS: PIC replaced paper towels.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed employee wearing watch, and multiple rings while preparing pizza sauce in main kitchen area. CA: with the exception of a plain ring, jewelry cannot be worn on the hands or wrists while working with exposed food. COS: PIC instructed employee to remove jewelry.
