Observed soiled ice machine. Equipment food-contact surfaces and utensils shall be clean to sight and touch. C/A: owner turned off ice machine in order to clean and sanitize.
12A - contamination prevented during food preparation, storage, display

Observed flour and grits stored in open containers not sealed. Food shall be stored where it is not exposed to splash, dust, or other contamination. C/A: PIC placed items in a sealed container.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet wiping cloth stored on prep table. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution. C/A: owner placed wet clothes in sanitizer solution.
