6-1A - proper cold holding temperatures

Observed cut lettuce and sliced tomatoes stored at temperatures of 66 and 70 degrees Fahrenheit on countertop in front area. COS- lettuce was put back in the fridge and tomatoes were thrown away C/A: All TCS food must held at 41 degrees Fahrenheit and below in all coolers. Establish a written procedure if using time as a public health control.

Observed black buildup inside bulk ice machine. C/A: Clean. Increase cleaning frequency.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employee actively preparing food without a hair and beard net. C/A: Wear a hair restraint at all times. Wear a beard net when facial hair growth is half an inch or greater.
