Routine
6-1A - proper cold holding temperatures
Observed sliced tomatoes and dressings at one prep top cooler at 58 degrees F and 56 degrees F respectively. C/A - do NOT use cooler until it has been serviced and repaired. COS - kitchen manager had food moved to other coolers since it had been in nonworking coolers less than 2 hours.
15C - nonfood-contact surfaces clean
Observed massive build up on outside of fryer. C/A - clean more often to prevent build up of food debris.
