6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
observed items at cold held buffet unit above 41 degrees F. COS-items removed and replaced with items from the walk-in cooler that were <41 degrees F or disposed of and not replaced, more ice was added to the unit.
4-2B - food-contact surfaces: cleaned & sanitized
observed sanitizer sink at ware wash station with no bleach solution present. ca-keep sink between 50-150 ppm.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(h),(i) - approved sewage disposal; system; other liquid wastes and rainwater (p) (c)
observed pipes under ware-wash sink not connected to drain pipe and water spilled onto the floor, causing smell in kitchen. CA-repair asap and clean area thoroughly.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
observed walk in cooler with food debris on floor and other items stored in the unit. CA-clean thoroughly and increase cleaning frequency.
