6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
observed chili in reach in cooler with pull date of 04/20/2026, green beans, mashed potatoes, macaroni and cheese in reach in cooler with no date marking. observed mushrooms in walk in cooler with no date marking. COS-items disposed of, and discussed proper date marking, if label has "pull date" then that is the date it should be disposed of or used by, if writing the "prep date" then it should be clarified.

observed seal on back door exit degrading and sunlight coming through. CA-replace seal to prevent pest intrusion.

observed grease hood vents caked with grease, CA-service and clean thoroughly.
