Observed multiple pans on cart in walk-in cooler (mashed potatoes 45 degrees, green beans 43 degrees, mac and cheese 44 degrees, corn 44 degrees) from last night 2/24/2026 covered but not at 41 degrees or below. CA: PIC instructed items must be cooled properly and completely before storing in walk-in cooler. COS: PIC discarded items.

Items in walk-in cooler (mashed potatoes, green beans, mac and cheese, corn) were cooled improperly, by covering last night. CA: PIC was instructed on how to properly cool.

Ice build-up on ceiling and condenser line of walk-in freezer.

Mop not hung to dry.
