Observed several wet wiping cloths stored on countertops throughout main kitchen. All wet wiping cloths must be stored in sanitizer solution between uses. Replace sanitizer every 4 hours - test concentration.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(g)2 - kitchen and tableware, properly handled to protect food-/lip-contact surfaces (c)
Observed plates and dishware not stored inverted. Store dishware inverted to protect food contact surface.
