2-2A - management knowledge, responsibilities, reporting
Regulation: 511-6-1.03(2)(o) - person-in-charge duties (pf)
The PIC could not provide documentation or otherwise satisfactorily demonstrate during the inspection, that all food employees and conditional employees are informed of their responsibility to report to management information about their health and activities as it relates to diseases that are transmissible through food. The PIC will have 72 hours to provide documentation.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed ready-to-eat, potentially hazardous food (rice and gravy) prepared on-site and frozen not properly date marked. Observed processed ready-to-eat, potentially hazardous food held more than 24 hours not properly date marked after opening (potato salad and pasta salad in the prep cooler). COS: The PIC was able to prove the correct dates and I allowed her to correct them on-site.
