High Priority - Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed Triple Sink at Quaternary 100ppm. Premix is also dilute to same level. Operator fixed and was able to get chemical to 200 ppm of Quaternary. Corrected On-Site

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed make line make table - precooked egg (45°F - Cold Holding); veggie omelet (46°F - Cold Holding); sausage (46°F - Cold Holding); cream cheese (47°F - Cold Holding), per employee moved to unit less than an hour ago. Operator had employee remove all items and store in standing cooler and freezer to rapidly cool. After 20 minutes observed each item at following respective temperatures: precooked egg (41°F - Cold Holding); veggie omelet (42°F - Cold Holding); sausage (42°F - Cold Holding); cream cheese (43°F - Cold Holding), items were moved to freezer to cool as quickly as possible.
