High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. - At the front counter stored overnight, per operator- observed sour cream and butter packs (50-57°F) stored in deep pans inside of an open top cooler near the Bain Marie where chilli is stored. Stop sale issued and explained to operator proper cold holding methods- operator placed fresh sour cream and butter packs inside of shallow pans in an ice bath.
