High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed a employee cutting tomatoes with bare hands.

Intermediate - Food service manager not certified within 30 days of employment. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/DBPR/hotels-restaurants/food-lodging/food-manager/ observed the owner Donna Hinds has not been trained as a CFM manager and has owned the restaurant for since January.

Intermediate - Nonservice animals in the food establishment or on premises. Observed a dog in the counter area where no food is prepared. Owner took the dog home before the end of the inspection. Corrected On-Site

Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed tuna salad made on Friday per the operator not date marked.

Intermediate - Required employee training expired for all employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed all the food safety handling cards had expired in February of 2021.

Basic - Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed a cook with a bracelet on while preparing food. This is a repeat violation from 01/28/21. Discussed with operator about about keeping Jewelry off the employee wrists.

Basic - In-use tongs stored on equipment door handle between uses. Observed tongs hanging from the oven door handle. Operator removed the tongs. This is a repeat violation from 01/28/21. Discussed with operator about keeping tongs off the oven door handles. Corrected On-Site Repeat Violation

Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Observed a missing light shield by the double door reach in cooler.
