High Priority - Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed high temperature dishwasher in use and not sanitizing properly after running machine 4 different times. Employee will set up three compartment sink as back up with quaternary to sanitize. Manager has technician to come out to fix. Spoke to Linda and follow day call back.
