High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher with 0ppm tested. Operator got machine up to 25ppm. Operator called dishwasher repair. Set up triple sink until dishwasher is fixed. Corrective Action Taken

Intermediate - Handwash sink not accessible for employee use at all times. Observed the hand sink in the prep area blocked by a garbage can and spray bottles. Employee moved the items in front of the hand sink. Corrected On-Site
