Basic - Equipment and utensils not properly air-dried - wet nesting. Observed a plastic container on the drying rack at warewashing area wet nesting.

Inspection Completed - No Further Action
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed sliced cheese (52F - Cold Holding) at reach-in cooler at cook line. As per staff, less than two hours. Product was moved to another unit for rapid cooling. Corrective Action Taken
High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed at mop sink splitter.
Intermediate - Handwash sink not accessible for employee use at all times. Observed hand washing sink blocked by hand trolley at entrance to kitchen and hand washing sink blocked by plastic container at cook line . Trolley and plastic container were removed. Corrected On-Site
Basic - Equipment in poor repair. Observed reach-in cooler gaskets next to thermalizer in disrepair.
Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Observed at walk-in freezer cooling unit left underside.
