Observed tuna thawed in the vacuum package. Advised operator that starting January 1/2023 the fish must be removed from the vacuum package.

High Priority - Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed the wiping cloth quaternary solution at 400 ppm. Operator diluted the quaternary sanitizing solution to 200 ppm Corrected On-Site

Basic - Floors not constructed to be easily cleanable. Observed the floor of the back area with holes Repeat Violation

Basic - Food not stored at least 6 inches off of the floor. Observed stored on the floor, a plastic container with soy sauce. Back storage area stored .

Basic - Time/temperature control for safety food thawed in an improper manner. Observed a plastic bag of shredded kani kama being thawed at room temperature in the triple sink.

Basic - Wet mop not stored in a manner to allow the mop to dry.

Basic - Floors not constructed to be easily cleanable. Observed the back area floor not easily cleanable due to holes in the floor Repeat Violation

Basic - Single-service articles improperly stored. Observed single service plastic lids stored on the floor of the back area.
