Observed at front counter sliced tomato (51F - Cold Holding) as per operator less than 4 hours. Operator stored in reach in cooler for rapid cooling. Observed in reach in cooler to the right of cook line cut lettuce (49F - Cold Holding) as per operator less than 4 hours. Operator states that unit is opened and closed frequently. Corrective Action Taken
