Observed rice (85F - Hot Holding); mashed potatoes (93F - Hot Holding); gravy (88F - Hot Holding); beans (88F - Hot Holding) on steam table. As per manager the items were on line for approximately one hour. The manager reheated the item all over 165°F for 15 minutes and turned the steam table on. Corrected On-Site
