High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Checked temperature of shredded mozzarella 51°f stored inside reach in cooler less than 3 hours recommend to quick chill cheese. Corrective Action Taken

Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed two brown cutting boards soiled has white residue left on the surface, recommend to replace or resurface used for slicing bread. Green cutting board has black discoloration left on the surface used in cold prep room.

Basic - Compartment of equipment subject to the accumulation of moisture is not sloped to drain to allow complete drainage. Observed water leaking from pipe coming from the air conditioner system in the order taken area ( front service line) Manager notify refrigerator company. Corrective Action Taken

Basic - Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed employee wearing watch while slicing deli meats in the cold prep room.

Basic - Equipment in poor repair. Observed reach in cooler doors not closing properly hinges out alignment, located in the bread station.

Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed rust on storage shelves inside walk in cooler (prep cooler)
