Observed in cooler drawer under flattop grill. raw chicken (61F - Cold Holding at 2:55, placed in cooler at 12:15, retemp 58F at 3:25); sliced ham (60F - Cold Holding at 2:55, placed in cooler at 12:15, retemp 56F at 3:25) employees placed in freezer to bring temperature down quickly.
