Food items hot holding in stand alone hot holding unit: cilantro rice (123F - Hot Holding); queso (95F - Hot Holding); black beans (127F - Hot Holding) The manager on duty turned up the temperature on the hot holding unit to maintain the temperature to 135 degrees or above. Discussed monitoring food stored in hot holding unit throughout the day going forward and a hot holding chart was provided. Food items were reheated on the stove top and the temperatures was above to 165 degrees. Corrected On-Site
