High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. In the reach in freezer by water heater, raw shrimp over ready to eat smoked sausage in ziplock bag. Operator relocated then sausage. Corrected On-Site

In glass door reach in cooler, ham (70F - Cold Holding); sausage (72F - Cold Holding) per operator during rush places tray on cook line. Placed back in reach in cooler a few minutes prior. Discussed with operator utilizing existing time as public health control procedures for time/temperature control food for safety in tray.
