High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed on the buffet line: Butter chips (70F - Cold Holding). Operator stated it had been out for approximately 2hrs. Operator placed it in a reach in cooler. Corrective Action Taken
Intermediate - Handwash sink used for purposes other than handwashing. Observed their kitchen hand sink with trash bags and lemons inside. Operator removed them. Corrected On-Site
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed their quaternary test strips out of date.

High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed on the buffet line: Sausage (105F - Hot Holding). Operator stated it had been out for approximately 2hrs. Instructed operator that it needed to be reheated but they did not perform any action.
Basic - Missing drain plug at dumpster. Observed a missing drain plug for the dumpster.
