The food-contact surfaces of cooking and baking equipment shall be cleaned at least every 24 hours. This subsection does not apply to hot oil cooking and filtering equipment if it is cleaned as specified under subsection (7)(b)3(v) of this Rule.

The cavities and door seals of microwave ovens shall be cleaned at least every 24 hours by using the manufacturer's recommended cleaning procedure. Note: Observed multiple microwaves on prep line to have accumulation on door seals. PIC stated a new cleaning procedure of cleaning microwaves at least every 24 hours will be implemented, and all microwaves would be cleaned by end of business.
