Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Quaternary ammonium sanitizer concentration is too low (below 150ppm) in spray bottles used to clean dining room table tops. Corrective action - Quaternary ammonium sanitizer must be kept at the manufacturer's recommended levels (150ppm - 400ppm). Person in charge replaced spray bottle with new spray bottle filled from 3-compartment sink dispenser within manufacturer's recommended sanitizer concentration (150ppm - 400ppm).
14B - utensils, equipment and linens: properly stored, dried, handled
Stacking wet plastic containers and cups on drying rack near 3-compartment sink and drink station. Person in charge unstacked wet plastic containers and cups.
