Observed plate of raw sausage with pack of tortillas laying directly on top of it while also stored above RTE sauces. CA: Food must be stored in order of minimal internal cook temp. COS: Tortillas were discarded and sausage was moved.
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple TCS food holding above 41F. See temp log. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F or below or 135°F or above. COS: Foods out of temp for longer than 4 hours were discarded, foods out of temp for less than 4 hours were moved to WIC to cool rapidly.
