At time of inspection, observed Time/Temperature Control for Safety (TCS) foods being stored in the reach-in cooler (RIC) at temperatures exceeding 41 degrees F. COS: PIC discarded items that had been in the RIC for an extended period. All other TCS items that were just placed in the RIC ~3 hours before start of inspection were moved to the freezer. CA: PIC contacted a repair company to service the RIC. The repair company is scheduled to visit the facility this afternoon. PIC confirms that the RIC will not be used to store TCS items, until it has been verified that the unit is capable of holding TCS at temperatures below 41 degrees F.


12/10/2025: The manager notified me that the cooler has been repaired and is holding TCS foods below 41 degrees F. I visited the facility and verified that the unit was working properly at that time. Temperatures observed: Strawberry cream cheese = 37 degrees F; Boiled egg = 36 degrees F; Sausage link = 37 degrees F. Advised manager to keep an eye on the internal thermometer, to monitor that the unit continues cooling properly.

CA: PIC instructed maintenance to attempt to snake the pipe and clear the blockage. PIC has contacted Dekle Plumbing and requested that they make another visit to the property to address the issue again. The kitchen may not be used for food service, until the issue has been corrected AND the floor has been cleaned and disinfected.


12/10/2025: The manager notified me that the drain has been cleared by Dekle Plumbing and the issue has been resolved (manager also stated that the grease trap had been serviced). I visited the facility to verify that both sinks (the handwashing sink and the three-compartment sink) were draining properly, with no backup occurring. At time of informal inspection, I ran water in both sinks for an extended period and both sinks drained with no backup observed. This violation has been corrected.
