Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
At time of inspection, observed several items in the prep top cooler registered at 49-52 F. // Advised PIC to throw out items that have been out longer than 4 hours. // Advised to repair prep top + keep lids on containers.// Advised to not rotate food out, but to throw out after four hours until prep top can be fixed.
