Observed build-up in the interior baffles of both ice machines in the main kitchen.
RCA: Cleaning frequency of the interior of the ice machines may need to be increased as to prevent build-up.

Observed gap at the bottom of the back door.
RCA: PIC advised that a new weather strip is needed to seal off outer openings to the building. Outer openings of a food service establishment shall be protected against the entry of insects and rodents by: (i) Filling or closing holes and other gaps along floors, walls, and ceilings; (ii) Closed, tight-fitting windows; and (iii) Solid, self-closing, tight-fitting doors.

Observed scoops and handles to be stored in contact with lettuce, chocolate chips and breading throughout the facility. COS/CA: PIC removed scoops. RCA: Scoops shall be stored in such a way that the handles is not in contact with the food product.

Observed old brown lettuce in reach in cooler for salad plates. observed crumbs deposit in hot holding equipment in back of kitchen. RCA: Facility shall cleaning within equipment regularly. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Observed employee actively drinking from can at prep line. Had employee discard the beverage. Educated PIC on proper storage of employee beverages. CA: Drinks must have lid and straw and cannot be stored over or on prep areas. Drinks cannot be stored next to food product, single-serve items, or clean dishes.
