Observed TCS foods cold holding in the reach in coolers above 41F. Advised PIC all TCS foods shall cold hold at 41F or below. Advised to discard.
2-2A - management knowledge, responsibilities, reporting
Regulation: 511-6-1.03(2)(o) - person-in-charge duties (pf)
Facility could not provide agreement forms indicating employee's responsibility to report food borne illnesses and symptoms. Advised PIC to obtain an employee health policy. have employees sign & have available to the Health Authority at all times.
2-2E - response procedures for vomiting & diarrheal events

PIC could not provide clean up procedures when responding to diarrheal events. Advised PIC to clean up procedures when responding to vomiting/ diarrheal events. Advised PIC to obtain clean up procedures.
